Apple Oatmeal Raisin Cookies - Healthy Fast Food

For those of you who know me, I am always talking about the amazing healing properties of food. While this is very entertaining to me, it is not always as much fun to my daughter who had to hear about all of the wonderful things every meal did for the body. Well, since she is safely away at college, I wanted to share some of this “fun and entertainment” with all of you.

The first wonderful recipe I wanted to share is the AMAZING Apple Oatmeal Raisin Cookies. These cookies are one of the best “to go” breakfast foods. FORGET HEALTHY BREAKFAST BARS…… THEY ARE NOT THAT HEALTHY- just read the ingredients list… Can you pronounce this stuff? More important, can your body digest this stuff?

These cookies contain the wonderful ingredient; Blackstrap molasses. There is an old saying that goes" blackstrap molasses and wheat germ bread-makes you live so long, you wish you were dead”. I don’t know about wishing you were dead, but it contains some very hard to find and absorbable trace minerals IN THEIR MOST NATURAL FORM. I find these cookies to be one the best sources of iron for blood cells, plus a host of important vitamins, minerals, and antioxidants.

Makes 3 dozen cookies

1½ cups quick cooking rolled oats
1½ cups organic whole wheat flour
1 teaspoon wheat germ
½ cup blackstrap molasses
1 teaspoon baking powder
¼ teaspoon baking soda
½ sea salt
1 ½ teaspoon cinnamon
½ raisins
1 cup finely chopped, peeled apple (such as Granny Smith)
1 egg, slightly beaten
½ cup honey
½ cup organic coconut oil
1/3 cup milk (can be omitted if you like)

1. Preheat oven to 375° F
2. In a medium bowl, combine oats, flour, blackstrap molasses, baking soda, salt, and cinnamon.
Stir to combine.
3. Stir in raisins and apple.
4. In a large bowl combine egg, honey, oil and milk. Stir in dry ingredients. Mix to form a smooth
batter.
5. Drop rounded teaspoon of dough onto ungreased baking sheet. Leave 2 inches between cookies. Press tops of cookies to make rounded.
6. Bake for 10 to 12 minutes or until golden brown.
7. Remove from oven. Cool and ENJOY!

These cookies are great tasting but JUST LOOK at the AMAZING ingredients:
